Vegan Carrot Apple Muffin

For me baking is a relaxing activity and something that I like to do on Sundays. This past Sunday I baked Vegan Carrot Apple Muffins that are topped with cashew maple butter and walnuts. They are kind of healthy and kind of sweet too :)

This is what you need:

2 cups oat flour

1 tbsp of The Neat Egg mixed with water (follow package instructions)

1 tsp Baking Powder

1 tsp Bake Soda

Dash cinnamon

Dash nutmeg

2/3 Cup Coconut Sugar

2 large carrots (shredded)

1 red apple

2 tbsp apple cider vinegar

1 cup oat milk

3 tsp Coconut Oil

This is how you make it:

Mix all the dry ingredients first, set aside. Then mix all the wet ingredients on a separate bowl. Then just mix both and divide them into 12 muffin cups. Bake on 400F for 26 minutes. Top with your favorite nuts and nut butters. I used a maple cashew butter, walnuts and unsweetened coconut.
