You know when you are craving a pastry or cake but don't want to eat unhealthy? I got the right recipe for you today. A healthy filling muffin that will make your junk dessert craving go away.
1 3/4 cups - oat flour
2/3 cup - coconut sugar
1 tablespoon- baking powder
1/2 teaspoon- salt
1/2 cup- coconut oil or melted earth balance
1 cup- yogurt (I used coconut one from Chobani)
1 large egg
1/4 cup- fresh squeezed orange
. Pre-heat oven to 400 deg. F and use a cooking spray on your muffin pan. I like grape seed oil spray.
. In a large bowl whisk all the dry ingredients together.
. And in another bowl mix the oil, yogurt, orange juice and egg.
. Add the wet mixture to the dry ingredients. Don't over mix, batter should be thick and spongy.
. Divide the batter in the 12 muffin pan and tap lightly to let the batter settle.
. Bake for 15 minutes or until a fork/ toothpick comes out clean.
. Let it cool a little bit before removing from pan.
I love eating them with some peanut butter ;)
