I wonder if you are all as excited for the fall season as I am. I'm not the biggest fan of summer so by this time of the year I'm ready for some season change. Autumn is my favorite season, I love the weather, the flowers, the leaves, pumpkin lattes, Halloween, the decor... A couple weeks ago I decided to make some pumpkin bread, which got me even more excited for the end of the summer.
The recipe it's pretty healthy so don't worry too much about it and enjoy!
1 cup of organic pumpkin puree (I used canned)
1/2 cup coconut oil
1 teaspoon vanilla
3/4 cup unsweetened shredded coconut
1/2 cup maple syrup
1 cup oat flour
1/2 teaspoon salt
1 teaspoon baking powder
1 tablespoon of cinnamon
1 teaspoon of nutmeg
1 teaspoon of pumpkin spice
Preheat oven to 350F.
Spray some canola oil or grape seed oil to a standard sized loaf pan.
Combine the pumpkin, eggs, oil, vanilla and maple syrup.
In a separate mixing bowl combine flour, salt, baking powder, coconut and spices. Add to the wet ingredients and mix well.
Pour into loaf pan and bake for 30-40 minutes or until toothpick comes out clean.
