What I eat in a day- vegetarian

I love seeing what others eat, it inspires me to eat healthier and give me ideas for what to make. 

I thought I would share with you guys what I eat in a day, in case anyone is looking for ideas of vegetarian meals. 

This was a big eating day for me because I ran 6 miles, so just keep that in mind.

Breakfast- 6am

Oatmeal with chia seeds, coconut, walnuts, strawberries and peanut butter.

Post Run - 10:00 am

Smoothie with almond milk, banana and frozen mangoes.

Lunch - 1pm

2 egg omelette with spinach, tomatoes, asparagus, onions and oregano. 2 garlic olives and a heart of palm on the side. Some watermelon for dessert. 

Dinner - 6:30 pm

Quiche made with asparagus, peppers, tomatoes and spinach. Kale on the side.
