I was craving something sweet, baked, cakey with chocolate. So I decided to bake some healthy muffins to satisfy my sweet tooth.
1 tbsp baking powder
3/4 cup of oat flour
1/2 cup walnuts (ground)
2 tbsp cocoa powder unsweetened
1/2 cup almond milk
1 tbsp coconut palm sugar
1 tbsp cinnamon
1 tbsp coconut oil
1/2 packet vega one powder - vanilla flavor
Add all liquid ingredients and sugar to the blender.
In a bowl, mix all other ingredients. Add liquid mix to the dry ingredients, stir until well combined.
Divide into 12 muffin cups or pan.
Bake on 350 for 15 minutes. Yum!!! Each muffin has about 90 calories.
They are really good with a scoop of peanut butter.
