When the snow storm hit last weekend I realized I didn’t have much food in the house. Unlike most people in the east coast, I forgot to go grocery shopping and stock up. Since we couldn't go anywhere I had to make it work with what we had. This soup saved my weekend and I can’t wait to make it again. Simple, healthy and easy recipe.
Split Pea Soup
1 package of organic green split peas, I used this one
1 chopped onion
3 chopped carrots
32 oz of vegetable stock
5 cups of water or more
and spices, I used paprika, parsley, turmeric, garlic powder, cilantro
- Just put everything in the pan and bring to a quick boil. Then lower to a simmer and let it cook with a lid half open until desired tenderness. I think I let it cook for an hour. Check every 20 minutes, stir and add more water if necessary. Then in batches, add to a blender, and blend till smooth texture. Enjoy with a good movie.
